Beef & Sweet Potato Curry



This beef and sweet potato curry is a recipe that isn't to be skipped! I made this delicious recipe with a good friend of mine and we couldn't stop eating it was so deliciously good! This meal is the perfect meal for any time of the year... I know it won't disappoint!


Beef & Sweet Potato Curry

SERVES: 4-6

45 MINUTES (PREP & COOK)

INGREDIENTS

2 tablespoons vegetable or canola oil

1 medium white onion, roughly chopped

1 garlic fresh clove, crushed

90g (1/3 cup) Rogan Josh curry paste

600g beef, cut into 2-3cm pieces

1 can diced tomatoes

1 medium sweet potato, cubed

Rice

Cilantro (coriander), chopped

Plain yogurt

Sliced almonds, toasted

INSTRUCTIONS

Wash sweet potato, peel and cut into cubes, set aside for later use. In a frying pan, heat the vegetable or canola oil over medium heat. Add the onions and cook the onions for 3-4 minutes or until soft. Remove the onions and put in a bowl for later use.

Increase the heat to medium-high and cook the beef in 2 batches, in the same frying pan. Make sure to stir often, cooking for 4-5 minutes or until beef is browned.

Return all cooked beef to the pan, add the onions into the pan and add the curry paste, making sure to continually stir. Cook for 1-2 minutes or until aromatic. Beef should be fully covered with the paste.

Stir in the tomatoes and sweet potatoes into the frying pan. Reduce heat to low, cover and simmer for 15 minutes or until beef and sweet potatoes are tender.

Meanwhile, cook the rice in a large saucepan of salted boiling water, following packet directions, for 12-15 minutes or until just tender.

Serve the curry with the rice and garnish with yogurt, cilantro (coriander), and almonds.
