Bacon Wrapped Asparagus Bunches

Lets face it, sometimes side dishes are better than the main dish, and this is absolutely one of those sides. These bacon wrapped asparagus bunches are the perfect side dish to accompany any juicy steak, anything grilled or just whatever is on the dinner menu that night. And the best part, it is incredibly simple to make.

Bacon Wrapped Asparagus Bunches

2 Tbs Butter

2 Cloves Garlic (fresh, cropped)

Asparagus (you'll use about 5-8 stocks per bunch)

Bacon (2 slices per bunch)

Salt & Pepper to taste

Preheat your oven to 375f degrees.

First, lightly cook the bacon in a pan (you don't want it crispy), with about 2 tbs melted butter. Keeping in mind that you don't want the bacon to be cut too thinly. Once done, blot the bacon with paper towels but keep all the drippings in the pan to use later.

Then, wash and trim the asparagus if needed, before cooking them in hot water for a few minutes to blanch them - I usually do about 3 minutes. Then, separate the asparagus into small bunches - I usually do about 5-8 asparagus stocks per bunch, one bunch per person.

Then, take the first asparagus bunch and wrap with bacon and place into a baking dish, or if you prefer you can secure with a toothpick before placing into the baking dish.

Repeat this step with all of your asparagus bunches.

Combine the chopped garlic with the bacon drippings and lightly brush over each asparagus bunch. Add salt and pepper to taste.

Cook for about 20-25 minutes or until bacon seems crispy and the asparagus bunches are lightly roasted.

Enjoy... Buon appetito!
