Homemade Mac & Cheese


Macaroni and cheese is one of those foods that most children in the USA grow up eating. It is a favorite dish all over the United States and is known as a comfort food. Consisting of four main ingredients, pasta a cheese sauce butter and flour, mac & cheese is quite easy to make.

Here is my favorite macaroni and cheese recipe. I hope you enjoy, buon appetito!


Homemade Mac & Cheese

SERVES: 6 PEOPLE

55 MINUTES (PREP & MAKE)

INGREDIENTS

1 1/2 cup macaroni

3 tablespoons butter

3 tablespoons all purpose flour

2 cups milk (not skim

2 cups cheese (cheddar, sharp cheddar or swiss)

Salt and ground pepper to taste

INSTRUCTIONS

Preheat over to 350F.

Bring a pot of water to a boil, add salt to boiling water, then add pasta and cook.

**Make sure to cook the pasta al dente.

While the pasta is cooking, melt the butter in a large pot, large enough to hold the pasta after it is done cooking.

Add the flour to the butter mixture and stir over medium/low heat until the mixture is lightly browned. This will only take about 1-2 minutes, make sure not to over heat or burn the butter.

Add the milk, salt and pepper and whisk until all the flour lumps have dissolved.

Cook over medium heat until the sauce thickens and starts to bubble. This will take about 6 minutes, make sure not to let the mixture burn.

Stir in the cheese and whisk until smooth and melted then turn off the burner.

When the pasta is almost done, drain it and add it to the sauce.

Stir the pasta into the sauce then pour into an 8x8 baking dish. Cook for about 20-25 minutes or until lightly browned.

Notes:

If you want to make a spicy, buffalo mac & cheese add 1/2 cup hot sauce (like Frank's Redhot) to the sauce mixture in addition to adding about 4 ounces grated pepper jack cheese.

TO STORE:

Before you bake Mac & cheese in the oven, you can place in a container in the freezer to bake at a later time or you can store in the refrigerator for up to one week!
