Baked Smashed Potatoes

These potatoes are the perfect side dish for a weekday dinner or when you are entertaining! They are soft and on the inside and crisped around the edges. The ingredient list is mostly things that you already have in the house, making them quite simple to whip together!

Baked Smashed Potatoes




2 lbs. mini potatoes

4 tablespoons olive oil

2 tablespoons melted butter, unsalted

4 cloves garlic, crushed

3 tablespoons chopped fresh scallions

1 tablespoon fresh chopped parsley

2 tablespoons grated Parmesan Cheese

2 tablespoons chopped fresh chives

Fresh rosemary to sprinkle over top

Fresh parsley to garnish before serving

Freshly ground black pepper & salt to taste


Pre-heat your oven to 400°F.

Place a pot of water on the stove and bring to a boil, once boiling add a handful of salt to the water.

Meanwhile, clean each potato before placing it in the pot of salted boiling water, cook covered for about 15-20 minutes, until "fork-tender" and drain.

Place potatoes on a lightly oiled baking sheet. Then, take a glass cup or mug and lightly press down on each potato to "smash" it, being careful not to press too hard or you will end up breaking and flattening the potato.

In a separate bowl, mix together the butter, garlic, chives, scallions, and parsley and spoon over each potato. Sprinkle each with salt, pepper, rosemary and grated Parmesan Cheese. Place in oven and cook for about 15-20 minutes. You want the potatoes to be lightly browned and have the Parmesan Cheese melted.

Once done, remove fro the oven and sprinkle a pinch of salt over each one and garnish with fresh parsley before serving.


- Variation: Add sour cream, cheddar cheese and small pieces of cooked bacon on top before serving to get the flavor of a baked potato!

-Variation: Add roasted garlic into melted butter and sprinkle over the potatoes before serving!
